Roasted Chicken


Its not hard to like this dish. Roasted chicken mm mm good. This is the first time that I have cooked a chicken putting the herbs in side the chicken cavity. Wow that will tell you about me knowledge I have and what I have learned it a short period of time. This is a great way to cook whole chicken the flavors really stand out. The moistness of the breast will tickle your taste buds. This one is definitely in my cook book. The best thing is you can put what ever herbs you want in the cavity to change the flavor. The best thing it's easy and fast. Well got to go work on my knife skill need allot of practice

Risotto

What a great dish to cook( Risotto)!! My family really loved this one. The thing a liked most about it was the short time it takes to make. When you have eleven kids to feed this one is the one for me. Going to culinary school was the best thing I've done in a long time. The classes here taught me allot about cooking. Just need to get the knife skills down!!! I look forward to the new challenge every day. I look forward to all the new dishes I have never cooked.

Something to remember in fundmentals

Well, the second day of class is over and it should have been a disaster. We were cooking some great food but, the only thing was we forgot to prepare our recipes or at least study them. Wow talk about not having your head in the game! GOING TO COOKING CLASS WITHOUT KNOWING ANYTHING YOUR GOING TO COOK. That would be like going hunting without a gun. Here are the thing we were supposed to cook, 1) New York Strip Steak, Grilled, 2) Caramelized Onions, 3) Creamed Spinach, 4) French Fries (This was one I did know how to do), 5) Pommes Anna Aux Champignons, 6) Pommes Duchesse (We didn't have to cook), 7) Twice-Baked Potatoes with Cabbage & Leeks. WOW! Some of you may think this would be simple to do if you've been cooking a while but not when you've been in constrution most of your life. The only training I had was from my Mother, Who is a pretty good cook herself. Most of the cooking I learned was through trial and error. So what I'm trying to say is the most important thing you need to remember is to be prepaered for class, expect the unexpected, and be ready to do your best no matter what happens. Keep trying hard and learn as much as you can before your labs and every thing will turn out okay.

How hard are eggs to cook?

On the start of my first day of school in Culinary Arts class, I had the pleasure to find out that cooking eggs is alot harder than it looks. Just when you think your a great cook, come to find out you really don't know much about it. Chef Tim O'Donnell, C.E.C. said, "the best thing to do is to forget everything you think you know about cooking." That's just what I'm going to do. Doing things the right way is alot harder than it seems. Something as simple as an egg is one of the hardest things I had to cook to have it be done right. There can be no burn marks or crispy edges, omelets should have no white showing. How many time have I gone out and got a badly cooked egg or omelet. Looking forward to every class to improve on my cooking skills.
